Ingredients

1 Tbsp. Hill Country Fare Canola Oil

1 bag (16 oz.) H-E-B Fajita Vegetables

1 bag (12 oz.) sliced H-E-B Fully Cooked Chicken Breasts or Beef Fajit
as

1 bag (16 oz.) H-E-B Steamable Spanish Rice

1/2 bag (1/2 c.) H-E-B Sliced Zucchini or H-E-B Broccoli Florets

Directions


Spray a 13 x 9-inch microwave safe baking dish with non-stick spray an
d set aside.
Heat a heavy bottom skillet over high heat for 3 minutes. Add canola o
il and fajita vegetables and stir-fry for 5 minutes or until onions be
come slightly browned. Add chicken or beef fajitas and continue to sti
r-fry for 3 minutes.
Meanwhile, heat Spanish rice according to package directions and sprea
d on bottom of prepared baking dish and set aside. Place zucchini or b
roccoli florets in a microwave safe bowl, cover with plastic wrap and
microwave on high power for 4 minutes. Spread cooked zucchini or brocc
oli florets over rice.
Spread fajita vegetables and fajitas over rice and zucchini or broccol
i florets mixture, cover with plastic wrap and heat in the microwave o
ven on high power for 6 minutes.
