Belgian Waffles with Peach Compote
1 bag (16 oz.) H-E-B Sliced Peaches
1 c. Hill Country Fare Guava Nectar
2 packets (1/4 oz. each) unflavored gelatin
1/2 c. sugar or 1/3 c. Hill Country Fare 0 Calorie Sweetener
2 c. Greek style fat free yogurt
1 box (6 ct.) H-E-B Classic Selections Belgian Waffles
Combine sliced peaches and guava nectar in a saucepan and bring to a b
oil over medium heat, reduce heat to medium low and cook 15 minutes or
until sauce is thickened. Keep warm.
Place 2/3 cup water in a microwave safe 2 quart bowl and sprinkle the
2 packets of unflavored gelatin. Microwave on high power 1 minute or
until gelatin is dissolved. Add sugar to gelatin and slowly add yogurt
, beating constantly with an electric mixer on medium speed 2 minutes.
Heat waffles according to package directions, cut each in half and ser
ve with peaches in guava sauce and a scoop of whipped yogurt.
