Rosie's "Marry Me" Enchiladas
When Rosie first made these enchiladas for a taste test, one of the tasters commented that if he could find a girl to make these enchiladas he would ask her to marry him on the spot.
1 c. H-E-B Chipotle & Garlic Fire Roasted Salsa
* Hill Country Fare Canola Oil Non-Stick Spray
16 H-E-B White Corn Tortillas
1/2 c. fine chopped Texas 1015 Onion
1 pkg. (8 oz.) H-E-B Grated Queso Cotija
Heat oven to 400°F. Line a large baking pan with foil, spray with
nonstick cooking spray, and set aside. Blend salsa in blender or food
processor to a smooth consistency, place in a pie pan and set aside.
Spray tortillas on each side with one squirt of the nonstick cooking s
pray, stack, and wrap in plastic film. Heat tortillas in microwave for
1 minute and 15 seconds, then remove plastic film.
Dip each tortilla in the chipotle salsa, spread 2 tablespoons of queso
and 1 to 2 teaspoons chopped onion down center of tortilla and roll t
ightly. Place enchiladas in prepared baking pan in a single layer, sea
m side down. Top with remaining cheese, onions (if desired) and chipot
le salsa. Bake for 15 minutes and serve hot.
