12 corn tortillas, cut into thin strips
1 pouch (16 oz.) H-E-B Cheesy Chicken Enchilada Soup
1 can (10 oz.) H-E-B Premium Chicken Breast Chunks, drained
1 pkg. (8 oz.) H-E-B Mexican Blend Shredded Cheese, regular or reduced
1 c. onion, chopped
2 medium tomatoes, chopped
1/4 c. cilantro, chopped
Heat oven to 450°F. Spray a 2-quart microwave safe baking dish wi
th non-stick cooking spray; set aside.
Combine tortilla strips, H-E-B Cheesy Chicken Enchilada soup, drained
chicken breast chunks, shredded cheese, onion, tomato and cilantro; to
ss to coat ingredients. Pour enchilada mixture in prepared baking dis
h. Cover dish loosely with plastic wrap and heat in microwave oven fo
r 5 minutes on high power.
Remove plastic wrap and bake on the center oven rack for 10 minutes un
til cheese is bubbly.
