Roasted Sweet Potatoes & Apples
2 lbs. sweet potatoes or yams, peeled and cut into 1-inch round slices
1 lb. granny smith apples, peeled, cored & sliced
1 c. sweet yellow onion, chopped
2 Tbsp. fine chopped fresh ginger
2 Tbsp. H-E-B Olive Oil
1/4 c. Hill Country Fare 0 Calorie Sweetener
1/4 tsp. each Central Market Organics Ground Cinnamon & Cayenne Pepper
Heat oven to 450°F. Line a roasting pan with foil and spray with
no-stick cooking spray.
Combine all of the ingredients in a large bowl and season to taste wit
h salt. Spread the mixture in the prepared roasting pan and roast for
1 hour, stirring every 15 minutes. Serve immediately.
