Light Orange Cranberry Walnut Cookies
2 1/2 c. H-E-B Baker's Scoop Whole Wheat Flour
1 c. H-E-B Baker's Scoop All Purpose Flour
2 tsp. Hill Country Fare Baking Powder
3/4 c. H-E-B Extra Light Olive Oil
1 3/4 c. brown sugar blend with Splenda
1 c. H-E-B Real Egg
1 c. fresh cranberries, chopped
2 Tbsp. fresh grated orange peel
1/2 c. Hill Country Fare Walnut Pieces
Heat oven to 350°F. Line 3 cookie baking sheets with H-E-B Parchm
ent Paper and set aside.
Combine the whole wheat flour, all purpose flour and baking powder in
a large mixing bowl and set aside.
Beat the olive oil and brown sugar blend using an electric mixer on me
dium speed for 1 minute. Add in the Real Egg 1/4-cup at a time, on me
dium speed (about 1 minute). Add the flour mixture one cup at a time
on low speed (about 2 minutes). Stir in the chopped walnuts, cranber
ries and orange zest and mix for 30 seconds on medium speed.
Drop dough by rounded Tablespoonful onto prepared cookie sheet pans.
Bake the cookies for 15 minutes or until golden brown.
