Summer Lettuce & Salmon Salad
1 1/2 Tbsp. each: H-E-B Olive Oil & Red Wine Vinegar
1/2 tsp. H-E-B Dijon Mustard
1 can (14 oz.) Hill Country Fare Salmon, drained & bones discarded
1/2 head iceberg lettuce, torn into bite-size pieces
4 green onions, chopped
1/2 c. chopped parsley or cilantro
Combine the olive oil, vinegar and mustard in a salad bowl and stir we
ll with a fork.
Flake the salmon and add to the dressing and toss gently.
Layer the lettuce pieces, chopped green onion, chopped parsley or cila
ntro over the salmon, cover and refrigerate until ready to serve. Tos
s the salad before serving.
