Savory Turkey Veggie Meatballs on Spring Mix

Ingredients

2 Tbsp. H-E-B Olive Oil

1 medium carrot, peeled & shredded

1 small zucchini, shredded

3/4 c. fine chopped onion

4 button mushrooms, fine chopped

1 lb. H-E-B Ground Turkey Breast

1/4 c. whole wheat bread crumbs

1 H-E-B Large Egg, beaten

1 Tbsp. Hill Country Fare Worcestershire Sauce

2 c. Central Market Spring Mix

Directions


Heat the oven to 400°F. Line a baking pan with foil and spray wit
h no stick spray and set aside.
Heat a large heavy bottom skillet over medium heat for 3 minutes. Add
the olive oil, carrots, zucchini, onion and mushrooms to the hot skil
let and stir-fry for 5 minutes. Place vegetables in a mixing bowl and
allow to cool 5 minutes.
Add the ground turkey, whole wheat bread crumbs, beaten egg and Worces
tershire sauce to the cooked veggies. Mix with your hands and form in
to 12 meatballs. Place on the prepared sheet pan and bake on the cent
er oven rack for 15 minutes or until a the internal temperature reads
165°F. Place 1/2 cup spring mix on 4 plates and arrange 3 meatbal
ls on each and serve.
