Citrus Spinach & Chicken Salad
1 Tbsp. H-E-B Olive Oil
2 Ruby Grapefruits, peeled & sections with juice
1 avocado, peeled & sliced
1 pkg. (5 oz.) H-E-B Ready Fresh Go! Baby Spinach
2 thin slices red onion, rings separated
4 H-E-B Fully Cooked Reduced Sodium Chicken Breast, thin sliced
Combine the olive oil, grapefruit sections with their juice and avocad
o slices in a large salad bowl and toss gently to coat.
Top grapefruit mixture with baby spinach, red onions and sliced chicke
n. Cover the salad with plastic wrap and chill for 30 minutes or more
. Toss the salad before serving.
