Creamy Chicken and Asparagus Salad

Ingredients

* Dressing:

1/4 c. H-E-B Mayonnaise

1/4 c. H-E-B Buttermilk

1 tsp. Central Market Organics Dill or Herbs De Provence

• juice of 1 lemon

• salt and pepper, to taste

* Salad:

1 pkg. H-E-B Ready Fresh Go! Asparagus

4 c. H-E-B Rotisserie Original Chicken, shredded

1/2 c. sliced radishes

2 c. H-E-B Ready Fresh Go! Baby Spinach Leaves

2 large ripe tomatoes, thin sliced

Directions


Combine the mayonnaise, buttermilk, dill or herbs de Provence and lemo
n juice in a small bowl. Season the dressing with salt and fresh crac
ked pepper and set aside.
Place the package of asparagus spears in the microwave oven and microw
ave on High power for 2 minutes. This is just enough to make asparagu
s crisp tender. Cut off and discard the bottom inch of the asparagus
and cut into 1-inch sections.
Combine the shredded chicken, asparagus and radishes in a salad bowl.
Add the salad dressing , toss, cover and refrigerate.
Layer the baby spinach leaves, tomato slices on 4 individual dinner pl
ates and spoon 1/4 of the chicken salad on each plate.
