Mediterranean Lamb Kabobs

Ingredients

2 lb. boneless leg of lamb, cut into 1 1/2 inch cubes

2 Tbsp. H-E-B Light Olive Oil

6 H-E-B Ready Fresh Go! Garlic Cloves, chopped

1/2 c. H-E-B Ready Fresh Go! Chopped Onion

1 Tbsp. each chopped: fresh oregano, thyme & mint

* juice of 1 lemon

1 large yellow onion

8 small roma tomatoes

8 button mushrooms

1 each: green & red bell pepper, cut into 8 squares

Directions


Combine the lamb cubes, olive oil, chopped garlic, chopped onion, oreg
ano, thyme, mint and lemon juice in a zipper bag. Season the lamb to
taste with salt and pepper and seal the bag and marinate in refrigerat
or for 1 hour or until ready to grill.
Assemble Kabobs in the following order: red pepper, lamb cube, onion w
edge, lamb cube, mushroom, lamb cube, tomato, lamb cube and green pepp
er.
Heat gas or charcoal grill to hot (400°F). Spray a grilling mesh
with no-stick spray and set over a foil lined baking sheet. Arrange t
he lamb kabobs on the grilling mesh and place on the hot grill. Grill
the kabobs 10 minutes, turning once during the grilling time.
