Tuna Salad in Tomato Half

2 medium tomatoes

1 can (6 oz.) H-E-B Albacore Tuna packed in water, drained & flaked

1 celery rib, chopped finely

1 jar (2 oz.) H-E-B Harvest Moon Diced Piminetos, drained

1/4 c. H-E-B Fat Free Sour Cream

1/2 c. chopped cucumber

1/4 c. Hill Country Fare Sweet Pickle Relish


Cut each tomato in half and scoop out the pulp. Chop the pulp and pla
ce in a large mixing bowl. Set the tomatoes on a plate, cover with pl
astic wrap and refrigerate.
Add the flaked tuna, chopped celery, drained pimientos, fat free sour
cream, chopped cucumber and sweet pickle relish to the tomato pulp. S
eason the mixture with salt and pepper to taste. Divide the mixture ev
enly with and stuff each tomato half. Serve chilled.
