Chicken Enchilada Surprise
1 Tbsp. Hill Country Fare Canola Oil
1 lb. Hill Country Fare Frozen Boneless Skinless Chicken Breasts, thaw
ed and thin sliced
1 c. chopped onion
1 c. chopped tomatoes
1 c. shredded H-E-B Fat Free Cheddar Cheese
1 can (15 oz.) Hill Country Fare Enchilada Sauce: red or green
2 H-E-B White Corn Tortillas, cut into thin strips
Heat oven to 400°F. Spray a 9 X 13-inch baking pan with non-stick
cooking spray; set aside.
Heat a large skillet over high heat for 3 minutes. Add the oil and th
in sliced chicken and stir fry the chicken for 3 to 4 minutes or until
fully cooked. Season the chicken to taste with pepper.
Combine the chicken, onion, tomato, shredded cheese and enchilada sauc
e in the prepared baking dish. Sprinkle the tortilla strips on top an
d bake uncovered for 20 minutes or until cheese is bubbly on the edges
and tortillas are golden. Serve immediately.
