Roasted Tomato Caprese Tapas
2 c. H-E-B Seriously Sweet Tomatoes, halved
1 c. H-E-B Shredded Fat Free Mozzarella Cheese
1/2 c. red onion, chopped
1/4 c. basil leaves, chopped fresh
2 Tbsp. H-E-B Extra Virgin Olive Oil
1/4 tsp. Central Market Organics Crushed Red Pepper
32 H-E-B 8 Grains & Seeds Crackers
Heat oven broiler to high. Set the oven rack in the middle. Line a b
aking sheet with foil and spray with no stick olive oil stray. Arrang
e the tomato halves on the baking sheet and spray them with the no-sti
ck olive oil spray. Broil the tomato slices for 10 minutes or until s
lightly brown and golden on edges, and cool.
Combine the roasted tomato slices, shredded mozzarella cheese, chopped
red onion, basil leaves, olive oil and crushed red pepper in a mixing
bowl; toss lightly. Season the Tomato Caprese mixture with salt and
fresh cracked pepper.
Spread 1 Tablespoon of the Tomato Caprese mixture on each H-E-B 8 Grai
ns & Seeds Cracker.
