Walnut Chicken Salad Appetizers
8 chicken tenders
1/2 c. fine chopped celery
3 green onions, chopped
1/2 c. H-E-B Fat Free Sour Cream
1/2 c. Hill Country Fare Walnut Pieces
1/4 tsp. Hill Country Fare Cayenne Pepper (optional)
Combine the chicken tenders and 3 cups water in a saucepot and bring t
o a boil over medium heat. Reduce the heat to medium and cook for 10
minutes. Drain the tenders, cool and shred.
Combine the shredded chicken, celery, green onions, fat free sour crea
m, walnut pieces and cayenne pepper if desired in a bowl. Season the
chicken salad to taste with salt and pepper. Chill the chicken salad
for 30 minutes or until ready to serve.
Place 1 Tablespoon chicken salad on each H-E-B Fully Fit 8 Grain and S
eeds crackers and serve on a tray.
