Ingredients

1 c. each: H-E-B Select Grilled Zucchini, Eggplant & Peppers, thawed a
nd thin sliced

1/4 c. H-E-B Chef Prepared Basil Pesto Sauce

8 H-E-B Harvest Moon Kalamata Olives, pitted and thin sliced

1/4 c. H-E-B Reduced Fat Crumbled Feta Cheese

32 H-E-B Deli Fully Fit Flatbread Crackers

Directions


Combine the thin sliced grilled vegetables, sun dried tomato or pesto
sauce, sliced olives and feta cheese in a microwave safe mixing bowl a
nd toss to combine. Season the mixture to taste with salt and fresh cr
acked black pepper. Cover the bowl and refrigerate or microwave on Hig
h power for 2 minutes and stir.
Serve 1 Tablespoon of the warm grilled Mediterranean Vegetable mixture
on each H-E-B Deli Fully Fit Flatbread cracker and arrange on a servi
ng platter. You can also allow guests to top their own crackers.
