Green Beans with Mushrooms

Ingredients

2 Tbsp. Hill Country Fare Extra Virgin Olive Oil

1 large shallot, peeled and sliced thin

1 c. fresh sliced mushrooms

3 Tbsp. Hill Country Fare Zesty Bread Crumbs

1 lb. fresh green beans, ends trimmed

Directions


Heat a heavy-bottom skillet over medium heat for 3 minutes. Add olive
oil, sliced shallots, and sliced mushrooms and stir-fry for 5 minutes
or until onions are golden and mushrooms are cooked. Stir in the bread
crumbs and heat for 1 more minute. Remove skillet from heat and set a
side.
Bring 4 cups of water to a boil in a 4-quart sauce pot over high heat.
Add green beans, allow the water to boil again, and cook uncovered fo
r 10 minutes or until green beans are tender as desired. Drain green b
eans, add to the mushroom-shallot mixture, and place in a large servin
g dish. Serve immediately. To prepare a day in advance, place cooked g
reen beans with mushrooms in a microwave-safe serving dish, cool, cove
r with plastic wrap, and refrigerate. Heat in the microwave oven on hi
gh power for 5 minutes before serving.
