Grilled Peach and Mozzarella Stack

Ingredients

* juice of 1 lemon

5 fresh, firm peaches

2 green onions, chopped

2 Tbsp. H-E-B Blossom Honey

¼ c. fresh cilantro

* juice of 1 lime

2 Tbsp. H-E-B Extra Virgin Olive Oil

* salt and pepper

4 oz. fresh Mozzarella, cut into 12 thin slices

1 bag (5 oz.) Central Market™ Organics Herb Garden Mix (optional
)

Directions


Combine lemon juice and 1 cup of water in a bowl. Cut 4 peaches into r
ound slices ¼ inch thick. When you get to the peach stone, use a
paring knife to remove the stone and continue slicing the peaches. Dip
peaches into the lemon water and place on paper towels.
Cut the remaining peach into cubes. Combine chopped peach, green onion
s, honey, cilantro, lime juice, and olive oil in a food processor or b
lender bowl. Process mixture into a dressing, and season to taste with
salt and pepper, and set aside.
Spray a grilling mesh with nonstick cooking spray and place on a foil-
lined baking sheet. Brush each peach round with the dressing and place
on prepared grilling mesh.
Heat grill to medium heat (375°F). Clean grill of all grease drippings
. Place grilling mesh with peach slices on grill and cook for 3 minute
s per side or until grill marks form.
Make 4 layered stacks of grilled peaches and Mozzarella. Drizzle with
remaining dressing. Can be served on a bed of Central Market™ Organics
Herb Garden Spring Mix if desired.
