Olive and Lemon Pork Tenderloin
1 Pork tenderloin - trimmed
1/2 c. Cookwell and Company Olive and Lemon Vinaigrette
2 Tbsp. Ottavio Grapeseed Oil
* salt and pepper to taste
Place the trimmed pork in a sealable bag with vinaigrette, salt and p
epper and marinate for at least 1 hour, but no longer than 6 hours.
Preheat oven to 400°F.
Place a skillet over medium heat and add oil to the pan, tilt to coat.
Sear the pork for 2–3 minutes on each side until golden brown. Place
in oven and cook for another 10 minutes, or until the internal tempera
ture reaches 155°F.
Let pork rest for 5–10 minutes prior to serving.
