Ingredients

1 c. H-E-B Restaurant Style Seasoned Croutons

2 Tbsp. Hill Country Fare Canola Oil

1 1/2 c. H-E-B Frozen Fajita Blend Vegetables, chopped

2 lbs. H-E-B Lean Ground Beef

2 tsp. H-E-B Texas Spice Co. Beef Fajita Seasoning

1/4 c. chopped fresh cilantro

2 H-E-B Large Eggs

1/2 c. H-E-B Ketchup

Directions


Heat oven to 400°F. Spray a 1 1/2-quart loaf pan with nonstick cooking
spray and set aside.
Place croutons in food processor, process to coarse crumbs, and set as
ide. Heat a large skillet on high heat for 2 minutes. Add canola oil a
nd chopped vegetables and stir-fry until crisp brown on edges (about 3
minutes). Remove from heat.
Quickly combine crushed croutons, fried vegetable mixture, ground bee
f, fajita seasoning, cilantro, and eggs in a bowl. Press the mixture i
nto prepared loaf pan. Bake for 45 minutes or until a quick-response t
hermometer reads 160°F. Pour off excess fat and cool for 10 minutes. T
op meat loaf with ketchup and enjoy a great meal.
