Stir-Fried Spinach with Pine Nuts & Raisins

Ingredients

⅓ c. H-E-B Golden Raisins

1/2 c. water

2 Tbsp. Central Market Extra Virgin Olive Oil

2 Tbsp. sweet yellow onion, chopped

2 H-E-B Ready, Fresh, Go! Garlic Cloves, thin sliced

2 Tbsp. pine nuts or almond slivers

1 box (16 oz.) Central Market Fresh Baby Spinach

Directions


Combine the raisins and 1/2 cup water in a microwave safe bowl. Cover
with plastic wrap and microwave on High power for 1 minute. Remove fro
m microwave oven and set aside for 15 minutes to plump raisins.
Heat a large, heavy bottom skillet over Medium heat for 3 minutes. Add
olive oil and chopped onion and stir-fry for 1 minute. Add the garlic
and pine nuts or almond slivers; stir-fry 30 more seconds. Add the ba
by spinach and stir-fry for 2 minutes. Add the plumped drained raisins
, season to taste and serve immediately
