2 large or 3 medium sweet potatoes (about 2 pounds)
6 Tbsp. H-E-B Butter
1/4 c. brown sugar
1 (12 oz.) bag fresh cranberries
1/2 c. fresh or prepared orange juice
Wash potatoes; prick each side in 4 places
with a fork. Place in a mic
cover with a lid or paper towel. Microwave on
to 8 minutes or until done. Set potatoes
aside until cool enough to h
andle; then peel
potatoes and cut into bite-size pieces.
Melt butter in a 4-quart pot over Medium
heat; stir in brown sugar to
potatoes, cranberries and orange juice.
Toss to mix. St
ir gently and heat until
cranberries begin to pop open and potatoes
e hot. Season with salt, to taste.
