Original Beef Fajitas

4 lb. trimmed beef skirt steak for fajitas

2 Tbsp. H-E-B Texas Spice Co. Beef Fajita Seasoning

1 pkg. (16 oz.) H-E-B Ready, Fresh, Go!® Sliced Fajita Vegetables

1 pkg. (24 count) H-E-B Refrigerated Par Cooked Flour Tortillas

1 (16 oz.) container H-E-B Ready, Fresh, Go!® Guacamole Kit


Prepare charcoal or gas grill for cooking (375°F). Season the fajita m
eat on both sides with the H-E-B Texas Spice Co. Beef Fajita Seasoning
. Grill the fajitas for 6 to 8 minutes on each side or until cooked to
the desired degree of doneness. Remove from grill, place on a clean t
ray and cover with foil. Keep warm until ready to slice.
While the fajitas are grilling, spray a vegetable grilling rack with
the olive oil and add the sliced fajita vegetables. Grill the vegetabl
es for 3 to 5 minutes or until the onions are caramelized. Place grill
ed vegetables in a foil pan and keep warm on grill away from fire.
Heat the tortillas on the grill according to package directions and k
eep warm in tortilla warmer. Prepare the guacamole according to the pa
ckage directions and place in a small serving bowl.
Place the grilled fajita skirt meat on a cutting surface and cut into
thin strips across the grain of the meat. Place the sliced fajita mea
t on a platter with the grilled vegetables and serve with the hot flou
r tortillas and guacamole.
