Texas Style Baby Back Ribs

2 racks baby back ribs

14 Oz. Franklin Texas Barbecue Sauce

1 rib grilling rack

1 small bag H-E-B Mesquite Briquets

1 H-E-B Mesquite Wood Chips, soaked in water for 30 minutes


Brush the Baby Back Ribs with the H-E-B Texas BBQ Sauce and place on a
tray and set aside.
Stack 5 cups of the mesquite briquets on the opposite side of the gri
ll bottom and light. Allow the coals to turn gray and ashen (325°F). S
et the gas grill on low (burners on one side only) and place as many s
oaked mesquite wood chips in the smoker box. If using a gas grill, see
your grill manufacturer’s instructions for smoking and make sure you
have a full tank of gas before you start.
Place the 2 racks of ribs on the rib grilling rack and place on the g
rill rack away from the coals or gas burner. This is an indirect metho
d of cooking as the ribs are placed away from the heat source. Cover t
he grill and smoke the ribs for 1 1/2 hours, adding 8 to 10 briquets a
nd 1 cup of soaked wood chips every 30 minutes or as needed to keep th
e slow smoking fire going.
Remove the ribs from the smoker when tender (you should be able to re
move a rib bone easily). Cut rib rack between the ribs and place on a
platter and serve.
