Tuscan-Style Fish with Fresh Spinach

1 to 1 1/2 pounds fresh Tilapia Fillets

2 c. H-E-B Tomato Alfredo or Four Cheese Pasta Sauce

1 Tbsp. McCormick Italian Seasoning

1/2 c. shredded Parmesan, Asiago or Romano Cheese


1 Tbsp. H-E-B Extra Virgin Olive Oil

1 bag (9 or 10 ounce) fresh spinach leaves


Heat oven to 450°F. Coat a large baking sheet with non-stick spray.
Place fillets on baking sheet; season both sides with Italian seasonin
g. Spoon pasta sauce evenly over fillets.
Bake 10 minutes. While fish bakes, heat a large skillet or wok over M
edium-High heat; add oil. Add spinach to hot skillet by the handfuls,
stirring and quickly adding more to skillet as spinach cooks and shrin
ks, 20 or 30 seconds total. Remove from heat; season with salt and pep
per, to taste.
Place spinach onto individual plates, divided evenly. Top with fish;
sprinkle cheese over fish and serve immediately.
