Strawberry & Almond Salad with Pear Vinaigrette

Ingredients

* Salad:

1 Tbsp. sugar

¼ c. Hill Country Fare Sliced Almonds

1 (5 oz.) bag H-E-B Ready, Fresh, Go!® Baby Spring Mix

2 c. fresh strawberries, sliced

2 slices H-E-B Ready, Fresh, Go!™ Sliced Red Onions

½ c. H-E-B Reduced Fat Feta Cheese

* Sweet Pear Vinaigrette:

2 Tbsp. tablespoons H-E-B Extra Virgin Olive Oil

2 Tbsp. H-E-B Red or White Wine Vinegar

1 tsp. H-E-B Dijon Mustard

¼ c. Central Market™ Organics Pear Juice

Directions


Cover baking sheet with aluminum foil and set aside. Combine sugar and
almonds in heavy skillet; mix well. Heat on medium high and stir mixt
ure for 3 to 4 minutes, until sugar melts and glazes almonds. Immediat
ely spread almonds on a sheet of foil and cool, then break apart.
Layer spring mix, strawberries, onion, and cheese in salad bowl. Cove
r with plastic wrap and chill until ready to serve.
Combine olive oil, wine vinegar, Dijon mustard, and pear juice in crue
t or shaker bottle. Shake until blended well and set aside at room tem
perature.
Remove salad from refrigerator, add glazed almonds, and toss. Serve w
ith vinaigrette and enjoy!
