Blue Cheese Meatballs

Ingredients

1 Grilling Mesh or Vegetable Grilling Rack

1 lb. H-E-B extra lean ground beef

1 egg white, beaten

1/2 tsp. salt

1 tsp. fresh cracked black pepper

1/3 c. H-E-B Crumbled Blue Cheese

* Blue Cheese Dipping Sauce (optional)

1/4 c. H-E-B Crumbled Blue Cheese

1/4 c. H-E-B Light Sour Cream

1 Tbsp. H-E-B Half & Half

Directions


Line baking sheet with foil, insert grilling mesh or vegetable grillin
g rack, and spray with no stick cooking spray.
Combine lean ground beef, beaten egg white, salt, pepper, and crumbled
blue cheese in mixing bowl. Do not overmix or meatballs will be tough
. Form meat into 32 balls (1 tablespoon each)and place on prepared gri
lling mesh. Cover meatballs with plastic wrap and chill for 30 minutes
before grilling.
Heat gas or charcoal grill to 375 °F. Grill meatballs for 10 minu
tes with the lid closed. Mix dipping sauce ingredients. Serve meatball
s with sauce if desired.
