Glazed Carrots And Potatoes

4 tablespoon butter or margarine

4 tablespoon honey

2 tablespoon fresh lemon juice

3 cups chopped carrots (12 medium), cut in 1-inch pieces

3 cups cubed potatoes (a little more than one pound)

1/4 teaspoon salt


Heat butter for 40 seconds in 3-quart casserole suitable for microwave
Stir in honey, lemon juice, carrots and potatoes. Cover with glass lid
or plastic wrap. Cook 7 minutes.
Turn dish; stir; cover, cook 7 minutes longer or until vegetables are
tender. Add salt. Cover. Let stand 4 minutes before serving.
