Cheddar Bacon Mashed Potatoes

Ingredients

4 green onions, chopped

8 slices H-E-B Fully Cooked Bacon, chopped

1 cup H-E-B Cheddar Cheese, shredded

1 cup H-E-B Fresh Buttermilk Ranch Dressing

2 pounds Yukon Gold potatoes

Directions


Spray a 2-quart microwave-safe baking dish with nonstick cooking spray
; set aside.
Mash and peel potatoes. Cut potatoes into 1 1/2-inch cubes and place i
n a microwave-safe bowl. Add 1 1/2 cups water and cover potatoes with
plastic wrap. Microwave potatoes on High power for 12 minutes or unti
l tender. Drain the potatoes and mash with a potato masher or electric
mixer.
Add the H-E-B Fresh Buttermilk Ranch Dressing, shredded cheese, bacon,
and green onions to the mashed potatoes; stir to combine. Pour the ma
shed potatoes into the prepared baking dish and cover with plastic wra
p. You can refrigerate these potatoes over night or heat in the microw
ave for 4 minutes until steaming hot before serving
