2 pounds fresh Alaskan Keta Salmon fillets, skinned
* non-stick cooking spray or olive oil
2 cups (3 to 4 bunches fresh basil leaves
1/2 cup grated parmesan & Romano cheese
5 cloves garlic, peeled
2 tablespoons lemon juice
1/2 tsp. each salt and pepper
Heat oven to 450 degrees F.
Combine pesto ingredients by pulsing about 5 to 10 seconds in a food p
rocessor or blender until the texture of fine pebbles. Coat all sides
of salmon fillets with pesto.
Place salmon on a baking sheet prepared with non-stick spray or oil so
fillets are not touching. Bake in the top one-third of the oven for 1
0 to 15 minutes depending on thickness. Allow 10 minutes per one inch
of salmon thickness.
