1 - 1 1/2 lb. Cod Fillets, thawed
* McCormick Salt and Ground Black Pepper
1/2 stick (1/4 cup) butter
2 Tbsp. minced onion
1 tsp. lime zest
1 Tbsp. fresh lime juice
* chopped parsley for garnish, optional
Rinse fillets under cold water and pat dry with paper towels. Cut fill
ets in half. Season both sides with salt and pepper.
Chop onion very finely to mince. Zest lime; zest only the outer portio
n of the peel, avoiding the white bitter pith. Squeeze lime for juice.
Heat a large, non-stick skillet over medium-high heat 2 minutes. Melt
1 teaspoon butter in skillet; tilt skillet to coat bottom. Add cod; co
ok 2 1/2 to 4 minutes per side for 1/2 to 3/4-inch thick pieces. Remov
e to a plate and keep warm.
Melt 2 teaspoons butter in skillet over Medium heat. Add onion and Sau
té 1 minute. Add lime juice; stir and heat very briefly. Add re
maining 3 tablespoons butter and stir to melt. Heat 1 minute or until
butter is frothy and golden.
Stir in zest; pour sauce over cod. Garnish with parsley, if desired, a
nd serve immediately.
