Fresh Vegetable Fish Bake
1 pound fresh mushrooms, sliced
3/4 cup chopped fresh onion
2 tablespoon butter or margarine
4 medium potatoes, peeled and thinly sliced
1/4 cup fresh lemon juice
1 tablespoon fresh dill, chopped
3/4 teaspoon salt
1/4 teaspoon liquid hot pepper sauce
In medium skillet, sauti mushrooms and onions in butter until tender.
In 13 x 9 x 2-inch baking dish, combine mushroom mixture, potatoes, le
mon juice, dill, salt and hot pepper sauce; mix well.
Cover with aluminum foil.
Bake in 400 degrees oven for 30 minutes.
Meanwhile, split fish fillets in half lengthwise, season with salt and
pepper; roll up.
Wash broccoli and remove the large leaves and tough parts of the stalk
Cut into serving pieces.
Remove baking dish from oven.
Reduce oven temperature to 350 degrees.
Arrange fillets and broccoli over potatoes.
Add water and cover.
Return to oven and bake 25 minutes longer, or until fish flakes easily
with a fork and vegetables are tender
