1 (16 ounce) jar H-E-B Harvest Moon Heart of Palm, drained & thin slic

1 (6 ounce) bag baby spinach leaves or spring mix salad

1 large tomato

1 (4 ounce) jar H-E-B Harvest Moon Diced Pimientos, drained

1 cup H-E-B Mexican or Italian Blend Shredded Cheese

1/2 cup Hill Country Fare Thousand Island Salad Dressing


Cut heart of palms in half and set aside. Spread baby spinach leaves i
n salad platter or 6 individual salad plates. Arrange tomato wedges in
pairs in platter or two per salad plate. Stack 3 heart of palm sectio
ns in center of tomato wedges. Top salad with diced pimientos and shre
dded cheese.
Cover salad with plastic wrap and chill for 15 minutes or more. Top sa
lad with Thousand Island dressing before serving.
