German Style Potato Salad

4-6 servings

6 slices slices of bacon, cooked crisp and chopped

1/2 cup chopped onions

1 1/2 tbsp. flour

5 tbsp. sugar

1/2 cup vinegar

2 cans (15 oz) Hill Country sliced potatoes

1/2 teaspoon celery seeds


Cook bacon until crisp.
Reserve 1 tbsp of bacon fat in skillet.
Chop bacon and set aside.
Heat same skillet over medium heat and add bacon fat and onions.
Cook until golden (about 2 minutes).
Add flour and stir to combine.
Add sugar , vinegar and 1 1/2 cups water.
Bring to a boil until sauce thickens.
Remove from heat.
Combine potato flakes and let sit for 2-3 minutes.
Whip with a fork and season to taste with salt and pepper
