Garden Salad With Chive Dressing
2 bunches romaine hearts
10 ounce bag Matchstix™ carrots (3 cups)
1 large cucumber
1/4 c. diced red onion
2 to 3 tablespoons chives, cut into 1-inch pieces
2 tablespoons honey
1 tablespoon white wine vinegar
1 tablespoon dijon mustard
1/4 teaspoon ground black pepper
2 tablespoons extra virgin olive oil
1 teaspoon chopped chives
Thinly slice romaine crosswise into shreds.
Peel cucumber; cut lengthwise into quarters and remove seeds. Slice cr
osswise into thin strips. Dice onion. Cut chives into 1-inch pieces.
Whisk honey, vinegar, mustard and pepper together in a small bowl. Slo
wly add olive oil, whisking constantly, until blended or emulsified. A
dd 1 teaspoon chopped chives.
Toss lettuce, carrots, cucumber and onion in a large bowl with dressin
g. Sprinkle with chives and serve immediately.
