Cranberry Pineapple Holiday Salad
1/2 cup sliced almonds
1 cup H-E-B Harvest Moon Triple Cranberry Sauce
1/4 cup sugar
1 (20 ounces) can Hill Country Fare Pineapple Chunks, drained
1 (10 ounce) can H-E-B Harvest Moon Mandarin Orange Sections, drained
1 (10 ounce) bag mixed salad greens (6 cups)
Heat a skillet over high heat for 2 minutes. Add almonds and sugar to
hot skillet, reduce heat to medium high. Stir almonds constantly unti
l sugar melts and glazes almonds to a golden brown (about 2 minutes).
Place glazed almonds on a sheet of foil to cool.
Combine whole cranberry sauce, drained pineapple chunks, and drained m
andarin orange sections in a large salad bowl. Top cranberry mixture w
ith mixed salad greens. Cover salad with plastic wrap and refrigerate
for 15 minutes or more.
Before serving, sprinkle glazed almonds on top of mixed salad greens a
nd toss gently to mix ingredients.Salad dressing is not required.
