2 Pizzas, 8 slices Each
1 bag (12 oz.) frozen H-E-B Fully Cooked Chicken Breast Fajitas
2 H-E-B Pizza Crusts (1 kit)
2 Roma tomatoes, diced
1 1/2 c. prepared Alfredo sauce
2 c. (8 oz.) shredded mozzarella cheese
1 can (8 oz.) mushroom stems and pieces, drained
1/4 c. grated Parmesan cheese
* chopped fresh basil leaves, optional
Heat oven to 450°F. Place two oven racks in bottom half of oven. P
lace crusts on baking sheets or round pizza pans. (Save sauce from kit
for another use.)
Heat chicken in microwave according to package directions. Cut chick
en into bite-sized pieces. Dice tomatoes.
Spread 3/4 cup Alfredo sauce over each pizza crust. Sprinkle each w
ith 1 cup mozzarella cheese. Layer chicken, mushrooms and diced tomato
es over cheese. Top with grated Parmesan.
Bake 15 to 20 minutes, or until cheese bubbles and begins to brown.
Rotate pizzas on oven racks halfway through baking, if necessary, to e
nsure even browning.
Let stand 5 minutes; cut into slices and serve. Sprinkle tops with fr
esh chopped basil, if desired.
