Rotini With Spring Vegetables
1/4 cup H-E-B Extra Virgin Olive Oil
1/2 cup H-E-B Ready, Fresh Go!® Chopped Sweet Onion
2 H-E-B Ready, Fresh, Go!® Garlic Cloves, chopped
2 1/2 cups Each: 1-inch cut fresh asparagus thin sliced yellow squash
& halved cherry tomatoes
1 box (16 oz.) Barilla Plus Rotini
6 fresh basil leaves

Heat a large skillet over medium heat for 2 minutes. Add the olive oil
, onion and garlic to the skillet and stir-fry the mixture for 3 to 4
minutes. Add the 1-inch asparagus pieces and stir fry 3 more minutes.
Add the halved tomatoes and yellow squash and stir-fry for 3 more minu
tes. Season the vegetables to taste with salt and pepper, reduce the h
eat to low and cook for 5 minutes.
While the vegetables are cooking, prepare the Barilla Plus Rotini acco
rding to package directions. Drain the pasta and combine with the cook
ed vegetables in a large pasta bowl. Thin slice the basil, add to the
hot pasta and serve immediately.
