Penne with Bacon, Tomato & Peas
3 Tablespoons Crisco extra virgin olive oil divided
1 container (16 oz.) H-E-B seriously sweet tomatoes halved
3 cloves H-E-B Ready, Fresh, Go!™ garlic chopped
1 bag (16 oz.) H-E-B frozen petite peas
1 box (16 oz.) Barilla plus penne
8 slices H-E-B fully cooked® bacon chopped
1/3 cup H-E-B shredded italian romano parmesan or italian blend cheese
* salt & pepper
Bring 8 cups of water to boil in a large pot.
Meanwhile, heat a heavy bottom skillet over medium heat for 3 minutes
. Add 1 1/2 Tablespoons olive oil and tomatoes, stir-fry for 3 minutes
. Add the chopped garlic, frozen peas and 1/2 cup of water. Cook until
most of the water has evaporated (about 6 minutes). Keep the mixture
Cook the pasta according to the package directions. Drain the pasta a
nd place in a large pasta bowl. Add the bacon, the remaining 1 1/2 Tab
lespoons olive oil and shredded cheese to the pea mixture. Toss with t
he pasta and season to taste with salt and fresh cracked black pepper.
Serve steaming hot.
