Pasta And Spring Vegetables
1 (8-ounce) package H-E-B linguine
1 red bell pepper, cut into 1-inch match-stick strips or chopped
1 zucchini, cut into 1-inch match-stick strips or chopped
1 carrot, cut into 1-inch match-stick strips or chopped
4 green onions, chopped
5 Roma tomatoes, seeded and cut into 1-inch cubes
1/4 cup chopped basil
1/2 cup Italian salad dressing, regular or fat-free
Cook pasta according to package directions; drain and set aside.
While pasta is cooking, combine pepper, zucchini, carrot, onion, tomat
oes, basil and salad dressing in a large salad bowl; toss to coat.
When pasta is cooked and drained, add to vegetable mixture and season
to taste with salt and pepper.
Toss pasta and vegetable mixture to combine
