Mediterranean Pasta With Shrimp & Spinach

1 cup H-E-B fat free sour cream

1/2 cup Crumbled feta cheese with sun-dried tomatoes and basil

3 cloves Garlic peeled and chopped

4 ounces H-E-B fettuccine spaghetti or bow tie pasta

1 pkg. (6 oz.) H-E-B frozen chopped spinach

1 lb. Hill Country Fare large easy peel shrimp, peeled & tails removed
or you can use 1 lb. Hill Country Fare boneless skinless chicken brea
sts thin sliced


In a large pasta bowl, combine the fat free sour cream, feta cheese, a
nd garlic. Season the mixture to taste with salt and black pepper. S
et mixture aside. 2. Cook pasta according to package directions, but a
fter the first 6 minutes of cooking, add spinach and shrimp or thin sl
iced chicken to the boiling pasta. Bring the mixture to a boil again
and cook the pasta mixture for 4 more minutes. Drain pasta mixture th
oroughly. 3. Add hot pasta mixture to sour cream mixture and toss gent
ly. Serve immediately. Add-ons: For a spicier flavor, add 1/4 teaspoo
n crushed RED PEPPER and 1 teaspoon dried BASIL .
