Ingredients

1/4 pkg. Rice Vermicelli

4 H-E-B Fully Cooked Sweet Chili Chicken Breasts, thawed & thin s
liced

1/3 cup each: mint basil & cilantro leaves

1/3 c. Hill Country Fare Spicy Peanuts

10 each H-E-B Ready Fresh Go!® Lettuce Leaves

1/2 cup H-E-B Texas Twist Spicy Peanut Jalapeno Dressing

Directions


Heat 4 cups of water over high heat until boiling. Add the rice vermi
celli and stir until vermicelli is soft (about 1 minute). Remove from
heat and allow rice vermicelli to soak for 3 minutes. Drain, rinse a
nd drain the rice vermicelli. Cut the rice vermicelli into 3 inch len
gths and set aside.
Combine the rice vermicelli, thin sliced sweet chili chicken, mint, ba
sil, cilantro, and peanuts in a large mixing bowl. Toss the ingredien
ts gently to coat, cover and chill for 15 minutes or until ready to se
rve.
Spoon 1/3 cup of sweet chili chicken mixture on each lettuce leaf and
top with 1 teaspoon Spicy Peanut Jalapeno Dressing. Fold or roll the
lettuce wrap like a taco. Place lettuce wraps on a platter and serve
chilled.
