Stuffed Chicken Breast with Vegetables
1 box ( 6 oz.) Chicken flavored stuffing mix
1 cntr. (8 oz.) Spinach dip
1/2 cup Pecan pieces
1/2 cup Golden raisins
1/2 cup chicken broth
4 Boneless skinless chicken breasts
* salt & pepper
1 pkg. Béarnaise sauce
Combine stuffing mix, dip, pecans, raisins and broth in a large bowl.
Mix well and set aside.
On a clean cutting board, butterfly chicken breast. Fill chicken with
2 - 3 tablespoons of stuffing mix. Repeat until all 4 breasts are fill
Place chicken in a prepared baking dish and season with salt & pepper.
Bake at 350°F for 30 - 40 minutes or until internal temperature r
While chicken is baking, prepare Béarnaise sauce according to p
ackage instructions. Pour sauce over baked chicken and serve.
