Skillet Pork With Sweet Potatoes & Apples

1 pound bone-in Pork Loin Chops, cut 3/8-inch thick

1 large or 2 small sweet potatoes (about 1 pound)

1 medium onion

2 medium tart red apples

1 tablespoon butter

* salt & ground black pepper

1/4 teaspoon ground cinnamon

1/2 cup Hill Country Fare Natural Chicken Broth


Peel sweet potatoes and cut into 1/4-inch thick slices. If slices are
larger than 2 inches in diameter, stack slices and cut in half. Cut on
ion in half and into 1/4-inch thick slices. Cut apples into quarters a
nd remove core. Cut quarters into 1/4-inch thick slices.
Melt butter in a large, deep skillet over Medium-High heat. Season por
k with salt and pepper. Brown pork chops 2 minutes per side. Remove ch
ops to a plate.
Add potato and onion to skillet; sauté 5 minutes. Stir in apples and c
innamon. Season with 1/4 teaspoon each salt and pepper and toss to coa
t. Pour in chicken broth, cover skillet and reduce heat to Low. Simmer
10 minutes.
Add chops to skillet with any juices that have accumulated on plate. C
over and cook 5 more minutes or until potatoes are tender. Serve while
