Simply Texas Style Chicken

Ingredients

1 Large whole chicken

2 teaspoons Fajita seasoning

1 can (12 oz.) Tecate cerveza

1 cup H-E-B Ready, Fresh Go!® chopped onion

1 H-E-B Ready, Fresh, Go!® garlic clove chopped

1/2 cup Juice from H-E-B Harvest Moon™ jalapeño peppers

Directions


Season the chicken inside and out with the fajita seasoning and set as
ide.
Empty out half of the can of beer. Fill the beer can with the chopped
onion andgarlic. Add 1/2 cup juice from the jalapeño peppers into the
beer can with theonion mixture.
Place the filled beer can into the Bayou Classic ChickCan Rack.Set the
chicken, cavity upside down, on top of the beer can (see instructions
on ChickCan Rack label). Cover the chicken with plastic wrap andkeep r
efrigerated until ready to grill.
Prepare charcoal or gas grill for cooking (350F)*. Place the prepared
chickenon beer can holder over the indirect heat side of the grill. Gr
ill the chickenfor 2 hours or until fully cooked with an internal temp
erature of 180Ffrom the thickest part of the thigh. Carefully remove t
he chicken and can holderfrom the grill and allow to set for 10 minute
s. Remove the chicken from the canand place on a cutting surface and c
ut into 6 or 8 portions.Empty the can contents, onions and juice, over
the cut chicken pieces
