Seared Ancho Pepper Chicken
2 teaspoons each McCormick gourmet ground cumin & gourmet ancho ch
1/2 teaspoon each McCormick gourmet saigon cinnamon & coarse groun
d black pepper
1/4 teaspoon McCormick gourmet mexican oregano leaves
1 teaspoon Ground McCormick sea salt
2 teaspoons H-E-B extra virgin oil
1 pound Hill Country Fare boneless skinless chicken breasts
2 tablespoons Hill Country Fare Canola Oil for searing
Heat oven to 350°F. Spray a large baking dish with non-stick cooki
ng spray and set aside.
Combine the cumin, chili powder, cinnamon, pepper, oregano, salt and o
il in a small bowl and stir well to combine into a rub.
Rub each breast on all sides with the seasoning rub. Heat a skillet ov
er medium high heat for 3 minutes and add 2 Tablespoons cooking oil. S
ear the breasts on each side for 1/2 minute and place in the prepared
baking dish. Bake the chicken breasts for 25 minutes or until the juic
es run clear when pierced with a fork.
