Pork & Hominy With Corn Dumplings
1 tub (12 oz.) H-E-B Fully Cooked® Carne de Puerco, Seasoned Pork
1 10 ounce can diced tomatoes with green chilies
1 16 ounce can yellow hominy
1 2.25 ounce can sliced black olives
1 colby jack cheese
1 11.5 ounce tube refrigerated Pillsbury Cornbread Twists

Heat oven to 400 degrees.
Meanwhile, heat pork in microwave or on stovetop according to package
directions; stir and break up pork cubes with edge of spoon. Drain hom
iny, tomatoes and olives; toss with pork. Spread mixture evenly in a 9
-inch round baking dish or pie pan; sprinkle with cheese.
Open tube of cornbread twists, but do not unroll dough. Separate dough
at perforations into 8 round, pinwheel-style pieces. Place over top o
f casserole, 7 in a circular pattern and 1 in the center.
Bake casserole 5 to 8 minutes or until tops of cornbread just begin to
brown; turn cornbread over and bake casserole 15 minutes longer. Garn
ish with chopped cilantro or sliced green onion tops, if desired.
