Oregano-Lime Grilled Sirloin

1 1/2 to 2 lbs. boneless beef top sirloin steak, cut 3/4 to 1-inch thi

4 cloves garlic, crushed or minced

1 shallot, minced

1/4 cup fresh squeezed lime juice (1 to 2 limes)

2 tbsps. olive oil

2 tbsps. red wine vinegar

1 tbsp. chopped fresh oregano leaves

1 tsp. sugar

1 tsp. salt

1 tsp. coarse ground black pepper


Combine marinade ingredients in a 1-gallon sealable plastic bag. Add s
teak to bag; seal bag and toss to coat. Place in refrigerator to marin
ate 12 to 24 hours
Remove steak from refrigerator; let stand (in marinade) at room temper
ature 10 to 30 minutes while preparing grill.
Heat charcoal 30 minutes until covered with a light layer of gray ash
or heat gas grill 10 minutes with lid closed. Grill steak 4 inches abo
ve Medium heat (375-degree grill surface temperature). Cook 3/4-inch s
teak 6 to 8 minutes per side or 1-inch thick steak 9 to 12 minutes per
side. Remove from heat when internal temperature of steak reaches 140
degrees for Medium-Rare or 150 degrees for Medium doneness.
Let stand 3 to 5 minutes; cut and serve
