3 frozen H-E-B Fully Cooked Seasoned Chicken Breasts
1 medium onion
1 15 ounce can garbanzo beans
1 14 1/2 ounce can garlic-seasoned chicken broth
1 14 1/2 ounce can diced tomatoes
1/2 cup raisins
1 1/2 teaspoons ground cumin
1 teaspoon dried thyme leaves
1/4 teaspoon cinnamon
1 cup uncooked plain couscous
* salt and ground black pepper
1/2 cup chopped parsley
Heat chicken breasts in microwave according to package directions.
Meanwhile, chop onion. Rinse and drain garbanzo beans. Combine onion,
beans, broth, tomatoes, raisins and spices in a large, deep skillet. B
ring to a boil over Medium-High heat.
Stir in couscous; cover skillet and remove from heat. Let stand 5 minu
Slice chicken breasts into 1/4-inch thick strips. Stir strips into cou
scous mixture. Season to taste with salt and pepper. Sprinkle with par
sley and serve while hot.
