Grilled Fruit with Apricot Turkey Medallions
2 lbs. H-E-B fully fit™ turkey medallions
2 Fresh peaches
2 Fresh nectarines
2 Fresh sliced pineapple rings
1/4 cup Brown sugar
1/2 cup Apricot jam
1/4 cup chicken broth
1 Tbsp. Teriyaki sauce
Season both sides of turkey medallions with salt and pepper. Set aside
Slice peaches and nectarines in half and remove pit, then quarter.
Grill all fruit in a large non-stick grill skillet over medium/high he
at until it's nicely marked.
Remove fruit to a bowl and sprinkle with brown sugar. Cover bowl tight
ly to keep warm.
In the same skillet cook turkey for 4 to 6 minutes on each side depend
ing on thickness.
While turkey cooks, bring apricot jam, chicken broth and teriyaki sauc
e to a boil in a small sauce pot until combined and slightly reduced.
Remove from heat and brush over turkey. Serve with grilled fruit, stea
